Pork is the most consumed meat in the world. Although, pork has been given a bad wrap in the past it is highly nutritious. Pork is about 20% protein and is an excellent source of B2, B6, B12, and Niacin as well as iron. 

Pork comes in a variety of cuts and can be prepared in countless ways. In 2011, the USDA lowered the safe cooking internal temperature of pork to 145 degrees and allowed to rest for three minutes while its internal temperature rises a bit. No longer is pink pork something to be concerned about when cooked to the appropriate temperature.
